Beneath the neon lights and mirrored walls of this diner, Joe’s sets itself apart with its unrelenting quest to find locally sourced, sustainable produce. New Mexico-grown organic flour forms the dough for the organic pizza, upon which sizzles mozzarella and zesty heirloom tomatoes. The liver utilized in the liver-and-onions entrée comes fresh from the Sweet Grass Co-Op, as does the beef for the burgers. Joe’s offers a panoply of gluten-free options as well, and all of the desserts, including the chocolate mousse pie, are made in-house.
