In an intimate (50 seats) and cozily elegant setting, chef-owner Vince Cultraro (also of the original La Spiga in Edmonton, Alberta) sets the standard for Italian food in the desert. Here he turns out imaginative, subtle dishes with an emphasis on fresh ingredients, to the delight of a well-heeled, low-profile clientele. Start with the spicy sausage with mustard sauce, or the calamari with tomatillo reduction that has a delicacy that makes you question all previous versions you may have tasted. For entrées, try the branzino with fennel or the veal with an intense but light porcini sauce. Service is discreetly impeccable.
