Jean-Claude Tellechea keeps on improving his cooking while maintaining good quality at reasonable prices. Don't miss the Ibaïnoa ham with lambs' lettuce leaves (the ham itself is a masterpiece), the galette de pommes de terre, the delicious sheep cheese, and the chocolate assortment (Bayonne provided a haven for Portuguese chocolate makers chased out of their country by the Inquisition). Good, eclectic, fairly reasonably priced wine list. Warm welcome in the pure Basque tradition.
