A deep-rooted sense of authenticity is evident at this downtown establishment, known as one of the priciest, classiest rooms in the city. Its table d'hôte menu of house-marinated salmon, caramelized onion tart with Parmesan sauce and balsamic, black truffle squash gnocchi, porcini veal tenderloin on a bed of polenta, pastries and espresso is a worthwhile business expense. Risottos are of particular note, especially the green pea, fennel seed and pancetta risi e bisi --- it justifies the twenty minute wait. The à la carte menu offers Italian fare such as shellfish lemon linguine and almond-crusted rack of lamb with bagna cauda. Le Latini is the only restaurant in Montreal that imports white truffles from Alba, Italy; when in season, the kitchen uses them to great effect and in ample amounts to dress pastas, sauces and stuffings. Save room for the tiramisu, and save money for a bottle of fine Italian wine.
