Executive chef Miguel Morales, one of the best chefs in the Coachella Valley, oversees the menu. His specialties include seared ahi on a crisp potato cake with roasted eggplant, green beans, Moroccan spiced tomato and pistachio vinaigrette; shellfish risotto with lobster, calamari, rock shrimp, mussels and scallops in a homemade tomato sauce mixed with saffron risotto; and truly imaginative desserts decorated with spun sugar that looks so much like spun glass that youll want to put your dessert on your mantle rather than eat it. The comprehensive wine list features premium selections from California, Italy, Spain and, of course, Madeira ports. The rooms ambience---improved with a redesign a few years ago---is an attractive blend of California and the Mediterranean.
