: Whether you’re a ski bunny donning the latest designer wear, a boarder who’s just shredded his T-shirt or an in-the-know local who simply appreciates savvy cooking, this New American restaurant, named for owner-chef Matthew Jones, presents another option in the Edwards dining scene. Rushing through Jones’ innovative, organically-inclined, seasonally-driven menu would be a shame: Texas wild boar crowned with red chile, mango and silky avocado; salmon cakes sided with mango purée; pumpkin ravioli bobbing in a walnut butter sauce; coconut shrimp pad thai; and calamari bathing in a citrus-y sauce laced with cherry peppers. Instead, go with a gaggle of friends so you can graze. The wine list, an eclectic compilation of nearly 100 bottlings, includes a dozen pours by the glass, coupled with maps pointing to the grape’s origination.

Matthews in Edwards a delight

A well known restaurant for the locals, Matthews is a true find for vacationers and all devotees of destination dining. Matt and his wife Elena have created a relaxed but elegant venue for innovative food made with the freshest of local ingredients. Macadamia halibut with red pepper puree over braised seasonal vegetables in a leek broth, Colorado lamb T-Bone chops with demi-glace, jasmine rice & sautéed spinach, and Coconut tempura Barramundi sea bass with pineapple-lime buerre blanc,
wasabi mashed potatoes & asparagus are a just few of the offerings. There are also many shellfish creations and vegetarian offerings. The wine list is extensive with many selections by the glass, and the staff suggestions are spot-on. All in all, a lovely experience with superb service and a relaxing atmosphere.
