THIS RESTAURANT IS CHANGING LOCATIONS Chef Matt Martinez is to Dallas what Emeril is to New Orleans: over the top, loved by his customers and king of a mini-empire of restaurants, cookbooks and secret seasonings. Matt’s Rancho is a big, noisy, boisterous Tex-Mex mecca with some pretty good food and very good frozen margaritas. What you need to know is that everyone starts with a little Bob Armstrong dip, a concoction of melted cheese, taco beef, guacamole and sour cream. No matter what diet you are on, Bob is not on it. To stir or not to stir is the question. This is a serious debate, one that can destroy a friendship, cause a couple to divorce or parents to disinherit their children. If you stir, all the bits are mixed up in one big glop; if you don’t stir, you can orchestrate the perfect mix of bits for each bite. This question must be settled before ordering, if it’s a split vote, get two small orders. Except for the outstanding chile relleno, the rest of the menu is just above par Tex-Mex. The only real disappointments are the fajitas, too often overcooked, over salted and dried out. But after an order of Bob Armstrong and a margarita, who cares?
