Chef Mel Toledo, an alum of Bacchanalia, brings to Roswell a casual fine dining establishment. Guests can view the kitchen's activities via seating at the chef's tables. Start with the mushroom ravioli in a foamy wine truffle sauce; the perfume alone is a sybaritic experience. Share the generous octopus appetizer, its tenderness achieved by long, slow sous-vide cooking. Olive oil, fingerling potatoes and house-made chorizo provide complexity. Crispy pork ribs rubbed with seasoning, washed and cooked confit-style in duck fat, and then fried are a study in meat candy; the meat falls away from the bone but isn't flabby, and pickled red onions ride atop. We enjoyed the house-made pappardelle with a ragoût of sweet lamb, black olives, goat cheese and crumbs, and although the huge portion seemed daunting, somehow every morsel vanished. Also appealing is fettuccine with chicken bolognaise, herbed ricotta and Parmesan. Gluten-free and vegetarian diners are well-accommodated, too. Georgia's Sweet Grass Dairy cheeses are offered for an opener, but would make a fine dessert unless you spot something on pastry chef Kaley Hill's line-up, such as the Earl Grey-scented chocolate mousse with Honeysuckle's strawberry gelato. The wine list wanders through global resources, so as a result there are no boring selections and most are available by the glass.
