Traditional hibachi grill (also known as teppanyaki) fare, prepared by a knife-wielding, egg-throwing, wise-cracking chef, covers all the bases: chicken, beef, shrimp and scallops or any combination thereof, all served with crisp vegetables and well-seasoned fried rice. Communal table diners will also receive an oniony chicken broth soup and fresh salad topped with the traditional ginger dressing. Portions are more than generous --- consider paying a nominal fee for a shared plate. This type of dining can be fast-paced and noisy; over on the quieter sushi bar side of the restaurant you'll find the true treasure of Fuji. All sushi and sashimi are freshly prepared or rolled by sushi chefs, who service both grill diners and sushi bar patrons. Again, you'll find portions almost too ample. Try the signature Spicy Beach roll (tuna, salmon and crab), the KDH roll (for Kill Devil Hills) or the Yame roll. Quick take-out is also available; call ahead or place your order at the bar and enjoy a bowl of edamame and a cold Sapporo while you wait.
