Native Foods Restaurant Review: Tanya Petrovna opened her first vegetarian café in Palm Springs with such success that it spawned several other branches and two cookbooks. Produce is locally grown, and the ingredients, as far as Petrovna can manage, are organic. She also makes her own tempeh, tofu and seitan. She likes to make sport with popular fast food favorites, offering her own versions of burgers, pizzas and sandwiches, serving a Philly peppersteak sandwich made with seitan, burgers with tempeh patties (such as the scorpion burger, with blackened tempeh and chipotle sauce) and specials like an Oklahoma bacon cheeseburger (non-dairy cheese with vegetarian bacon). For dessert, try the peanut butter parfait; it's good enough to seem bad for you.
