Norio's Sushi Bar & Restaurant Restaurant Review: Tucked away on a courtyard overlooking a serene koi pond within The Fairmont Orchid, and with just 60 seats, this secluded, intimate eatery has such a warm atmosphere that you forget you are in a large hotel. At the sushi bar, you can see the chefs at work. (The restaurant’s namesake, chef Norio Yamamoto, has since moved on to other ventures.) The finer details are taken care of here, from the hot, lemon-fragrant towels you are offered to cleanse your hands to the exquisite saké selection on the otherwise brief wine list. Choose from dozens of sushi and sashimi variations. We especially love the miso black cod; the gingered, fried tofu with tempura sauce; and the panko-fried pork loin. Finish your meal with a spoonful of delicate green tea ice cream. This is sophisticated Japanese fare at its finest.
