Chef Scott Linquist (Coyo Taco) helms the kitchen at OLLA, which features regional cuisine from Oaxaca, Puebla, Yucatan, Veracruz and beyond. Expect lots of small and large plates like Mexican Caesar salad and loads of mole, as well as ollas (or pots) filled with everything from corn "truffles" and wild mushrooms to pork, tripe and fried egg. Copious mezcal and tequila (naturally) is available, as is a slew of cocktails.
