Panzano Restaurant Review: The signature restaurant of the Hotel Monaco Denver, Panzano, with its vaulted ceilings, contemporary décor, lively chef's counter and walls of windows overlooking downtown, is a staple for locals and tourists alike prowling for Northern Italian cuisine. Starters might include mushroom stuffed crêpes or fried Brussels sprouts tossed with apple cider reduction, pistachios and sliced green apple. You can't go wrong with pasta: carbonara with house-cured pancetta and Grana Padano or gnocchi with rabbit confit. Gluten-free menus are also available.
