Dishes incorporate local, organic and sustainable ingredients to create a seasonal menu that reflects chef Jaeger's classically grounded culinary approach accented with modern touches. Consider the prawn cappuccino with dashi custard, braised Peace River lamb shank with seared scallops and roasted pear risotto, and slow-poached Maple Hill chicken breast with confit leg and chive waffles. Also available are a table d’hôte and with 24 hours’ notice a five-course Canadian Comforts menu. Courses have included fresh Lois Lake steelhead salmon, Fraser Valley pork and more. Dessert highlights? The lemon tart with lemon-sour cream sorbet and a caramel pot de crème with chocolate cookies.
