In their sunny, orange-and-white Warehouse District hot-spot, co-owners Matthew Bickford and Michael Ryan take all the technical and creative skills they gleaned from working in some of the city's top kitchens and channel it into flexing the sandwich format into exciting new directions. Every component that goes into each sandwich is created in the busy exhibition kitchen: breads, cured and smoked meats, mustards, pickled vegetables---even the savory jams. All, needless to say, are put to excellent use. The tall stack of pastrami, piled high on rye and finished with pickled cabbage, is a thing of beauty. Slow-cooked tuna, plush and rich, ends with preserved lemons and salty black olives. Hot peppers make the egg salad memorable; beets put a surprising touch on a veggie burger, while blazing horseradish sets off thin-shaved beef on ciabatta. Salads are light and bright, and the grab-and-go desserts---including a brownie of the gods---do not disappoint.
