With serious modifications to the décor and menu, the former Charlie Chiang’s of Shirlington Village has become a classy Asian-fusion eatery. While longtime patrons may miss the former menu, they can still find their favorites with carry-out. But dining in assures the chance to tuck into some classics-with-a-twist. For one, the traditional “three cup chicken” becomes a lamb dish. Fried shrimp gets a gloss of crispiness from the application of hush-hush techniques. The kitchen’s reinterpretation of the traditional Peking duck shifts flavors to a five-spice overlay, and the appetizer soy-glazed ribs will stop you short. While the emphasis is on Asian seasonings, you may find a handful of Western flavors, such as the addition of rosemary balsamic vinegar, and zucchini---all of which enhance rather than detract from the overall point of Ping: Life’s a mix, and so is cooking.
