| Is it too strong a statement to proclaim Chris Bianco the patron saint of pizza? Not in this town it isn't. He crafts pristine pies with farmer's market produce at his modest digs in Phoenix' historic Heritage Square district. His dough seems leavened with manna from Heaven, and just as ethereal are Bianco's handmade mozzarella, wood-roasted mushrooms and fresh fennel sausage. With a menu composed of but two antipasti, three salads and six impossible-to-choose-from pizzas (start with the Wiseguy), Bianco has rewritten a cherished chapter from our foodlover's bible. While he must take some time off for the photo shoots that go with all those major magazine articles he's constantly featured in, the greatest testament to Bianco's fidelity to his craft is the fact that, as a hungry world beats a reverent path to his door, Chris is there --- day in and day out --- at his pizza oven; doing what God put him on this Earth to do. |
