Executive chef/owner Justin Flit attended The French Culinary Institute in New York and worked with Daniel Boulud at DBGB Kitchen and Bar before returning home to Miami and putting in a few years at Michael Mina's Bourbon Steak. He's since struck out on his own with Proof Pizza & Pasta, where the focus is on Neapolitan-style pizzas and house-made pastas. The wood-fired pies range from a classic margherita to the popular oxtail with mozzarella, black garlic, thyme and caramelized onions. Desserts include seasonally changing macaron ice cream sandwiches and panna cotta. The draft beer list spotlights local breweries, while the wine selection is heavy on Italian offerings.
