It starts with the tortilla selection: white, whole-wheat, spinach or red chile. Next come the fillings of grilled chicken or steak, pork, poached shrimp, grilled vegetables, tofu, brown rice, black beans and so on. House-made guacamole, chipotle chile, salsa fresca, Mexican oregano, and low-fat yogurt follow. Other options include pozole and chili made with poultry (rather than the customary higher-fat meats), a gargantuan nacho plate, and salads like the Santa Fe with grilled chicken, black beans, brown rice and shredded carrots topped with Monterey Jack cheese and a light cilantro-lime vinaigrette. Freshly squeezed juices and smoothies crafted with peaches, bananas, pineapple juice and mango add California sunshine. At lunchtime, the place is usually packed, but the line moves quickly.
