| After a day of gaming, relax at this small, elegant restaurant located off the lobby of the Casino Del Sol Resort, Spa & Conference Center (PY stands for Pascua Yaqui, the tribe that owns and operates the casino). Chef Jason Jonilonus created a menu with the usual steakhouse offerings, but he gives them a local twist. The pork belly appetizer, for instance, pairs with a sweet, dark applesauce spiked with a hint of heat from guajillo chiles. We also like the baked cilantro oysters. A buffalo sirloin is prepared with a prickly pear, chile demi-glaze; for vegetarians, there’s a mushroom-dusted tofu entrée. Tables are set with a quartet of sauces---the chef’s chimichurri, sherried mushroom, tomato coulis, and a veal reduction---as well as a trio of seasoned salts. The wine list is extensive with well over 1,000 labels from around the world. But mixologist Aaron DeFeo is at the ready with any number of his creative cocktails. |
