PY Steakhouse Restaurant Review: Tucked into a quiet corner of the bustling Casino Del Sol, PY Steakhouse is an ideal spot to celebrate. Steaks are served with chef de cuisine Erik Savin’s “rainbow of sauces.” Traditional steakhouse sides and starters are spun with Southwestern flavors, for example, the creamed spinach jolted with jalapeños. Oysters Casino Del Sol topped with smoky bacon, guajillo chile butter, asadero cheese and chives are faintly reminiscent of oysters Rockefeller, but better. Consider, too, the sous-vide half chicken with lemon and herbs with savory bread pudding plated alongside. Master sommelier Kevin Brady is adept at choosing appropriate pairings from the extensive and well-researched wine list. Cocktails are courtesy of master mixologist Aaron DeFeo, who has amassed the largest selection of whiskey in Southern Arizona with a continuing focus on scotch, bourbon and brandy.
