PY Steakhouse Restaurant Review: Small, elegant PY Steakhouse is tucked in a quiet corner between the casino and the sparkling resort hotel and spa. PY stands for Pascua Yaqui, the tribe that owns and operates the casino, and the dishes are inspired from near and far. A few tapas make a good start, but just remember that there are appetizers galore, including the memorable smoked Tender Belly pork belly. Then there are the steaks, from a petite filet mignon to the 22-ounce PY signature dry-aged cut, that all come with a medley of the chef’s special sauces. Sides are dressed-up versions of steakhouse regulars: baby butter mushrooms, spinach with a dash of jalapeño chiles, or potatoes prepared four different ways.
