RAYA Restaurant Review: Overlooking the Pacific from its space within The Ritz-Carlton, Laguna Niguel, the bright, open RAYA radiates a serene ambience, not unlike an outdoor venue. Well-known chef Richard Sandoval established the Latin-inspired concept, but the seasonal menu also draws inspiration from California and Asian cuisines. Steve Wan has taken over as chef de cuisine from Marissa Gerlach. Begin your meal with a selection from the sturdy wine list or a hand-crafted cocktail, and dive into the lobster tacos or Hawaiian ahi tuna ceviche. There’s an abundance of gluten-free options (noted by a special label) ranging from avocado gazpacho to an al pastor enchilada with achiote braised pork, black bean purée, charred pineapple salsa, adobo and avocado crema to Maine lobster salad with sweet potato, baby spinach, lemon vinaigrette, chile ancho-Port reduction and chive oil. For dessert, go for the sampler trio of a cinnamon sugar churros. The lunch menu shares many of the dishes from the dinner offerings, while breakfast presents classics with a zesty twist. Sunday brunch is a three-course affair with never-ending Champagne ($65).
