 Overlooking the Pacific from its space within The Ritz-Carlton, Laguna Niguel, the bright, open RAYA nearly radiates a serene ambience not unlike an outdoor venue. Chef Richard Sandoval leads a culinary team who design seasonal menus with an emphasis on fresh flavors and attention to detail. Begin your meal with a selection from the sturdy wine list or a hand-crafted cocktail, and dive into the spicy smoked swordfish dip or scallop ceviche. If you desire a second course, indulge in a soup, such as the spring pea or sweet corn. Entrées feature beef, poultry and seafood options, including the 24-hour braised Wagyu short ribs served over a Oaxacan cheese mash, and the wild Alaskan halibut accompanied by truffled boniato. A sampler of seasonally inspired desserts awaits at the end of your meal. Additionally, the lunch menu contains several hearty bites like the Jidori chicken sandwich or Wagyu sliders, and Sunday brunch is a three-course affair with never-ending Champagne.
