| Unfailingly sophisticated, from the ambience to the service to the cuisine, the signature restaurant of the JW Marriott Desert Springs Resort & Spa lives up to its luxuriant surroundings. The seasonal menu, which changes monthly, might feature grilled veal, fresh fish or any other specialties of the moment. Chef Gregorio Calderin favors light, pure flavors---a delicate minestrone (an oxymoron?) of white beans and herbs, a salad of sliced oranges scattered with a tiny dice of onions, scallop with a melting lemon risotto, lamb with a touch of anchovy in the sauce. If you're in a rustic mood try the artisanal pizza---the dough is made by pastry chef Marcos Gonzalez. Explore the wine list or opt for the menu’s recommended pairings.
