The Delano Hotel's tiny sushi and raw bar, consisting of a communal marble high-top table and some stools, is actually one of the most noteworthy casual spots on the beach. Being there can be likened to dining on a Martha Stewart Living set, complete with an audience of hungry loiterers glancing at their Cartiers and rolling their eyes at you to hurry up. International ingredients are fused with Japanese techniques, creating a memorable explosion of flavor. Everything but the kitchen sink goes into these divine hand-rolls and sushi: barbecued mahi mahi, olives, garlicky Boursin cheese, spiced mayonnaise, even an occasional raisin. Raw bar items are imported delicacies and sashimi is pristinely fresh and abundant. Dipping sauces span beyond the traditional American soy sauce accompaniment and include citrus-infused ponzu, Thai peanut and kimchi. True gourmands spring for imported sevruga, osetra, and beluga caviars.
