The menu at this small and lively Palm Desert restaurant is divided into three parts: classic, new and "tributes," and is designed to appeal to all parts of the desert's dining class, from the comfort-food loving country club members to the young weekenders from Los Angeles and San Francisco. Exemplifying the difference between the classic and the new are the two tuna dishes, a "classic" entrée of seared tuna with wasabi oil and ginger vinegar and a "new" small plate of tuna tartare with a Mexican spin featuring avocado, chayote, garlic confit, chili oil and agave syrup. There is a strong emphasis on the local, the seasonal and the sustainable, with the classic menu constant throughout a season, and the new items changing according to what chef Robert Douglas finds in the market that day or what catches his imagination. The "tributes" are a monthly celebration of a local farm, a friend of the restaurant or a calendar event such as Mardi Gras. From the brief and simple dessert menu, try the chef's rendition of Grandma Douglas's chocolate cake, which looks like the treat any grandmother might make, but tastes like a cake made by the grandmother we all wish we had. The kitchen is open until midnight and the bar until 2 a.m.
