The man behind ShabuMaru, located in The Westin Copley Place, Boston, is Jack Huang, who also owns Douzo and Basho Japanese Brasserie. This hot pot destination is a new adventure for Huang, who focuses on sushi at his other establishments. At ShabuMaru experienced shabu shabu guides help diners navigate through the hot pot process of cooking tableside. Start by choosing a house-made vegetable or chicken broth that is poured into a pot and heated to a boil. Then select thinly sliced cuts of certified Miyazaki Wagyu beef, Kurobuta pork belly, all-natural chicken breast or sushi-grade salmon, tuna and yellowtail. Locally grown vegetables and rice or noodles accompany the meal. Be sure to ask for the ponzu citrus-based soy sauce or creamy sesame sauce served with mix-ins like garlic paste, scallions, daikon purée and chili oil to make your own personalized taste experience. The restaurant serves beer (think Japanese favorites like Sapporo) and a nice selection of wines from California, Italy and Spain, as well as organic saké. Desserts include vanilla mochi made of rice brushed with confectioners’ sugar.
