The little spot gives new meaning to vegetarian fare. Even the most stubborn carnivore will sing the praises of the veggie burritos, the meal-in-itself vegetarian chili and the hulking apple-and-cheddar sandwich. The husband-and-wife owners run a tight ship in the no-frills eatery---only the freshest seasonal ingredients make the cut here. We're big fans of their creamy Moon Shakes, the yogurt smoothies and fresh carrot juice; the garlicky gazpacho (only in season) is simply inimitable. Shades of Green is a fave with all walks of life: Come high noon, you may have Albany Symphony Orchestra conductor David Alan Miller or singer Natalie Merchant (who pops by when in town) on one side of you and a couple of scruffy vegan skateboarders on the other. Service can be on the laid-back side (or even a tad forgetful), but the food is well worth the wait.
