Silverpeak Grill carries on the tradition of fine dining in Westin hotels. Its casual sophistication creates a comfortable atmosphere with dark woods and dim lighting. For breakfast, we like the crunchy grilled French toast with bananas and strawberries, and the smart dining option---egg white frittata with shrimp, asparagus tips and Roma tomatoes. Among lunch pastas is fusilli with rock shrimp, garlic and lemon cream. Typical of the creative luncheon and late-night dining sandwiches are the seared tuna burger with jalapeño mayonnaise and lemon pepper; and the Cuban panini created with roasted pork loin, smoked ham and Swiss cheese. Among our favorite starters on the dinner and late-night menus are crab cakes with chipotle rémoulade, and roasted poblano and chorizo quesadilla. A tapas platter features bacon-wrapped dates, lobster beignets with rémoulade sauce, curried chicken salad with grapes, and a Spanish olive tapenade. The sesame-crusted seared ahi tuna with mizuna salad and steamed rice is a dinner entrée winner. For heartier appetites, cowboy steak---a 32-ounce bourbon-glazed rib-eye---comes with fingerling potatoes; and rack of Colorado lamb with rosemary-garlic jus is complemented by garlic potato gratin, green beans and cippolini onions. Among sweet temptations are crème brûlée and warm chocolate cake with vanilla ice cream and raspberries.
