Smokey Bones Barbecue & Grill Restaurant Review: Most hard-core barbecue fans avoid corporate 'cue joints because the meat in question usually is cooked in an oven, over gas or has zilch character---all of which is anathema to them. Florida-based Smokey Bones is way better than most such operations, producing tender, but still al dente, ribs that have that pink cast that attests to their having been cooked over wood. Good sides include a respectable baked beans and slaw. The St. Louis-style ribs are what you want to target, although the pulled pork sandwich piled high on a bun is decent. (The meat could be more deeply seasoned, however.) The barbecue sauce is a dark, medium-bodied Kansas City-style sauce based on tomato. The extensive menu includes other choices, such as steak, for those not into the real thing. Lots of sports-focused TVs provide visual stimulation.
