Spring has long been on our list of restaurants to watch now and into the years ahead. It has been difficult to find a light, relaxed tone for contemporary American cooking. Chef Shawn McClain, formerly of Trio in Evanston, however, eschewing the idea that food arranged on a plate has to be vertically challenged, comes up with artful presentations---seafood being the main thrust---that are sensibly restrained yet impeccably delicious. This is a restaurant that has arrived at a mutual sense of understanding between the kitchen and the customer. The main focus is American contemporary, but there are more than a few Asian influences. Impressive dishes on the seasonal menu include egg drop soup with lobster, Arctic char with a cilantro-citrus-caviar vinaigrette, cod with a sweet pea emulsion, and an impressive nectarine tart. Soft, neutral colors set the stage for the minimal wall décor and less-is-better appointments. Two rows of back-to-back banquettes in the center of the room are angled so splendidly that every diner has a view of something. Quiet and comfortable, civilized dining.
