Theatrum Restaurante & Wine Bar Restaurant Review: Theatrum Restaurante & Wine Bar occupies the second level of the Teatro Nacional Sucre, Quito's elegant opera house. A dramatic red curtain divides the high-ceilinged dining room from the more casual wine bar. Seafood is clearly the star of the appetizer selection, with options like shrimp ceviche served with baby dry corn and fried green banana chips, and roasted octopus with baby yellow potatoes, fava beans and black olive vinaigrette. Follow this with crab and mascarpone ravioli with a creamy coral emulsion or a Theatrum signature dish such as the grilled grouper stacked with zucchini and herbed mushrooms and encircled by a moat of pea purée. Exotic fruits from Ecuador make for a stimulating dessert for both the palate and the mind; the produce is presented in different textures --- guanabana froth, babaco compote, naranjilla sorbet --- and accompanied by an illustrated guide portraying the fruits in their natural forms.
