| Many of the fish you are about to eat swim in tanks, and dim sum trolleys fill the aisles at lunchtime. Among the pages and pages of classic dishes from the Cantonese, Hunan and Szechwan repertoires, good bets include Cantonese roast duck, stir-fried grouper, shrimp with asparagus in black bean sauce, and Szechwan crispy beef.
