Owner Robert Mott, a former Silicon Valley executive, and his biochemist wife, Joni, abandoned their day jobs to open The Wine Bar in La Quinta's Old Town area, and it helped to fill a void. The lofty space is equal parts tasting room, bistro and wine shop, with an intimate bar, misted patio, and separate retail area. Robert runs a tight ship; expect iPad-armed servers taking and tracking orders from the menu of small and sharable plates. Offerings are limited to charcuterie, cheeses, flatbreads, sandwiches and salads, along with a wide array of wines available in various price ranges. The selection of wine flights is kept interesting, as they change at least once a week. The ample-size cheese and meat platter, with its cured Italian meats and assortment of hard and soft cheeses, is a nice starter. Mediterranean flatbread offers a generous mix of tomatoes, olive oil and Parmesan, topped with a balsamic vinegar glaze.
