It's very rare to find food trucks that serve noodles, and do them well. The staff at Yajima-ya are from Japan, so the items are not localized to the Hawaii palate (as they are at most other trucks). Here, the soba and udon is served with traditional Japanese garnishes, like natto (fermented soybeans), thinly sliced beef or pork, or assorted tempura. The plate lunches are also quite popular; mushroom chicken is a best seller. If you want dessert, the Belgian waffle is another item not found at any other food truck.
