Jean-Marc Notelet, the chef/owner from Caïus, is young and talented. He loves so much to play with the ingredients and spices that he changes his menu daily. The result of this chic bistro, entirely renovated in chocolate tones, is a modern and dynamic cuisine from the beginning to the end, shown with the clam celeriac cappuccino, tumeric and ginger swordfish, and ginseng and citron confit veal cheek.
