: Charlie Palmer's eponymous restaurant in the Joule Urban Resort in Dallas is the renowned chef's first outpost in Texas. Scott Romano, the on-site executive chef, pays homage to the restaurant's namesake with a New American menu reflective of Palmer's progressive American cuisine. Elegant, inspired dishes such as sautéed pheasant with fava beans and trumpet royales mesmerize the palate, and the exotic dessert selections are irresistible. The restaurant is also known for its collection of over 800 wines, and diners can use the eWinebook touch screen technology to easily find the perfect wine pairing for a meal.
