It is difficult to encapsulate the understatedly elegant Raffles hotel's dining room. Both décor and cuisine have Asian leanings, yet neither clearly fits into any one Asian style. There is also a French element, manifesting in both the cuisine and the discrete style of service, but the restaurant is by no means French. In the end, we must conclude that the menu, which changes seasonally, is quintessential California cuisine, drawing from French technique and Asian influences but embracing seasonal produce first and foremost. Starters like an heirloom tomato carpaccio with a ring of shaved tomato slices topped with tiny squares of fresh tomato and micro greens showcase the freshness and quality of ingredients as well as the attention to presentation. The Seckel pear appetizer, a perfectly poached pear stuffed with blue cheese, is a home run.
