Ken's Artisan Bakery Restaurant Review

: Ken Forkish, founder, chief baker and guiding spirit, fashioned his bakery in the style of classic French patisseries and boulangeries, which produce rustic loaves while promoting community. A legendary perfectionist, Forkish easily waxes poetic about the Zen of creating the perfect bread or pastry. His philosophy is simple and straightforward: use the finest fresh, local and organic ingredients, and take no shortcuts. No wonder the flaky croissants actually require three days to make. For a little variety, try the almond, chocolate, or the ham and cheese versions. Plump morning buns are slightly sweet and fragrant with orange; we also recommend the fruit tarts. For lunch, enjoy one of several sandwiches on country brown, a baguette or French rye, with fillings ranging from turkey and cheese to water buffalo. There is also always a house salad based on what's fresh in the market. Monday is pizza night, when the big round pies feature Forkish’s crispy crust. Seating can be a challenge at this popular spot, but Ken's also sells bread and pastry to-go.
