: Yes, you’ll need to mortgage the yacht, sell your golf clubs and forfeit your health club membership in order to afford dinner at this rustic-chic ranchstead, but it’s worth the splurge. The Rocky Mountain panorama through the windows is remarkable, and the Colorado-styled contemporary American dishes are extravagant compositions of tastes and textures. You can order à la carte, but the savory five-course dinners are the way to go. Seasonal offerings change frequently, but appetizers might include roasted bone marrow with grilled ciabatta, onion marmalade and watercress chimichurri or quail egg-topped foie gras sausage on a buckwheat pancake. Main dishes zigzag from buffalo filet mignon in ancho-prickly pear sauce, accompanied by huitlacoche tamales and calabacitas, to rosemary-scented, celeriac rémoulade-daubed elk loin with butter-browned potatoes. Go when you have endless hours to commit to a multi-course meal that concludes with apricot-frangipane tart or pumpkin cheesecake in front of a roaring fire. Oenophiles, take note: the rewarding wine list is a Goliath, with more than 500 bottlings. Scrutinize the roster carefully and you’ll even find a few bargains.
