: Yes, you’ll need to mortgage the yacht, sell your golf clubs, and forfeit your health club membership in order to afford dinner at this rustic Western ranch homestead embellished in elegance, but it’s worth the splurge. The panoramic Rocky Mountain views from the window seats are remarkable, and the Colorado-styled contemporary American dishes are extravagant compositions of tastes and textures. You can order à la carte, but the savory six-course tasting dinners are the way to go. The seasonal offerings change frequently, but appetizers might include wild mushroom rellenos with goat cheese, roasted garlic, charred corn and red chile or seared foie gras drizzled with Frangelico. Main dishes zigzag from roasted Colorado lamb chops sided with a smoked bacon and sweet potato hash to caribou paired with butternut squash risotto and a mixed berry polenta cake. Go when you have endless hours to commit to a multi-course meal that concludes with a sweet finale in front of a roaring fire. Oenophiles, take note: the rewarding wine list is a Goliath, with more than 500 bottlings. Scrutinize the roster carefully and you’ll even find a few bargains.
