Not every Cajun/Creole restaurant offers smoked turkey-apricot sausage as one of the choices in its po’ boy sandwiches. Traditionalists will opt for the Louisiana hot or mild sausage or, perhaps, a fresh seafood po’ boy made with Mississippi catfish or oysters. Tasty as the sandwiches may be, it’s the chicken-sausage gumbo and the jambalaya that bring home the complexity of seasonings in this cuisine. Seasonal specials include crawfish étouffée, dirty rice and deep-fried turkey. End your meal with a slice of sweet-potato pie and a steaming cup of chicory coffee.
