Traditionalists will opt for the Louisiana hot or mild sausage or, perhaps, a fresh seafood po’ boy made with Mississippi catfish or oysters. Tasty as the sandwiches may be, it’s the chicken-sausage gumbo and the jambalaya that bring home the complexity of seasonings in this cuisine.
