Les Climats boasts a wine cellar filled with 1,500 vintages from Burgundy. The selection ranges from interesting items like a Santenay 1er Cru La Comme 2007 from Chapelle & Fils to a regal Romanée-Conti at about €7000 for the bottle. To suit the wine list, the stately setting dates back to the Art Nouveau period, with marble pillars and stained-glass windows. A courtyard is also open for lunch on sunny days. Julien Boscus, a former lieutenant of Pierre Gagnaire, crafts sophisticated dishes with regional ingredients. For an appetizer, slivers of black truffle are served on top of Burgundy snails fricassée with ratte potato mousseline. Roasted venison with cinnamon and black pepper butter is sided by wild mushrooms and spätzle (Alsatian noodles made with chestnut flour). Pastry chef Ji Sun Sung successfully matches black truffle with sweet elements in an exquisite dessert. “Richerenches” is a crusty milk chocolate sphere stuffed with exotic fruit panna cotta, and enhanced with truffle and caramelized hazelnut. Nice and professional service.
