: Margeaux Brasserie has opened in Waldorf Astoria Chicago. Chef-restaurateur Michael Mina is top toque, and Brent Balika, formerly of The Dawson, is executive chef. The menu favors Midwestern ingredients while staying true to French classics, and includes porclette cassoulet, escargot bordelaise and frog legs à la Trois Gros.
