P.Y.T. is chef Josef Centeno’s vegetable-centered restaurant in downtown Los Angeles on the corner of 4th and Main. While not confirmed, we agree that “P.Y.T.” could well stand for Pretty Young Turnip, judging from both the restaurant’s turnip-inspired art and its most famous (and deservedly) culty dish, the salt-baked turnip wrapped in hoja santa leaves and accompanied by shiso chimichurri. If you came just for this and a beet/bourbon/kombucha cocktail you’d be doing well, but why not also opt for a hearty hand-milled rye and oat porridge amped up with pecorino, pickled beet greens and urfa chile? Or a sensuous hand-torn pasta with shishito cream and yuzu? Centeno’s dishes at this airy, charming spot display a bold, spot-on sensibility for winsome marriages of flavor and texture, and mark his cooking as some of the most compelling in LA. Though vegetarian focused, there are also protein offerings like bincho roasted kanpachi and a Halvorson Farms heritage boneless pork rib. Brunch packs in a hip young DTLA crowd loving the sidewalk patio, noshing on creamy grits with amaranth, avocado toast with Brebirousse d'Argental sheep's milk Brie or a cardamom cream filled croiss'innamon roll. Look for an alluring California wine list and a warm chocolate cake with matcha cream for dessert.
