Pur' Restaurant Review:


Although the restaurant has two different entrances, we suggest using the hotel's, since the walk from the doors of rue de la Paix to Pur' is rather exceptional with the architecture, décor and art along the way. Once you are in the restaurant, admire the wall of wines, cheeses and cigars. Diners’ interests move quickly from the Hollywood-style rotunda to chef Jean-François Rouquette and his team in the open kitchen. While Rouquette insists on using only natural ingredients in his cooking, it doesn’t mean in the least that his menu lacks originality. The mélange of crab with pistachio oil and avocado bring out a spicy aroma, whereas the grilled foie gras has a smoky flavor; the ris de veau (roast calf sweetbread) is enhanced by the delicate flavors of the accompanying chanterelle mushrooms and green asparagus. Red fruit sorbets, among other desserts, may end the meal. The wine list, classified by prices, is composed with French wines, except for actress Carol Bouquet's Italian dessert wines.
