Even by day, the kitchen at this white-tablecloth ski resort dining room goes the extra mile, offering everything from rum-glazed french toast stuffed with bourbon-fried apples to Thai chile-and-rock shrimp pizza. But by night, no holds are barred with respect to luxury, be it lobster wontons with prickly pear dipping sauce or mustard-crusted rack of lamb in red wine butter with mascarpone “mac-and-cheese.” The wine list includes a fair selection by the glass, and spiked coffees for dessert seem apropos in view of the white-capped Rockies.
