Adam Kanter has been nuts about rum since he first visited the Caribbean as a kid. At his rum-focused eatery, Kanter creates all manner of libations, using seasonal fruit, inventive flavor pairings and infused herbal elixirs. Chef Luis Lara Polanco’s menu bounces around the Caribbean like a pirate on a spree, with Jamaican goat stew, ribs marinated in Dominican rum, Puerto Rican pernil (pork shoulder) and Cuban calamari.
