Kevin Sbraga, the New Jersey native who triumphed on the seventh season of “Top Chef,” is head of the line at Sbraga on Broad, a creative modern American restaurant with a strong focus on sustainable local ingredients. Sbraga, who cooked for Georges Perrier and Stephen Starr before opening his own place, offers a $55 four-course experience, with an additional $40 if you opt for beverage pairing, so it's not an inexpensive night out. Still, dishes such as foie gras soup with a Gruyère popover are unlike any you'll taste elsewhere. Try the hamachi with honeydew and jícama salad; fettuccine with pheasant sugo and caramelized cabbage; and plantains over bean purée with puffed rice and pickled onion. Be sure to enjoy any of the desserts, especially the Bavarian with salted caramel, poached apple and cider sorbet.
