Sbraga Restaurant Review

: Kevin Sbraga, the New Jersey native who triumphed on Top Chef’s seventh season, is head of the line at Sbraga on Broad, a creative modern American restaurant with a strong focus on sustainable local ingredients. Sbraga, who cooked for Georges Perrier and Stephen Starr before opening his own place, offers a $55 four-course experience, with an additional $40 if you opt for beverage pairing, so it's not an inexpensive night out. Still, dishes such as foie gras soup, with flavor notes of lemon grass and cream, honey and brandy, studded with crimson rose petals, are unlike any you'll taste elsewhere. Try the Spanish mackerel with eggplant "marmalade"; gemelli with escargots, smoked ham hocks and English peas; or dry-aged pork with an asparagus fricassée, morel mushroom and black kale. Be sure to enjoy any of the desserts, especially the chocolate macaroon with beetroot ice cream and raspberries.
