Contemporary Texas cuisine hits new heights when it is conceived by Stephan Pyles, a native-born Texan with the culinary imagination of a re-incarnated Hopi medicine man. Pyles flavors are clean, his combinations brilliant and his visuals spare and colorful. Molasses grilled quail with arugula, poached pear and Cambazola cheese is as fine an appetizer as Texas cuisine has produced, and fusion dishes like Caesar salad with jalapeño-polenta croutons and wood-roasted duck with spicy black-eyed pea hash are eye-popping palate pleasers. The room is grandly folksy, but service here can be as cloying as Pyles gooey trademark Heaven and Hell cake.
